Waterford Castle – Bord Bia’s “Just Ask!” Restaurant of the Month – December 2010

As Executive Chef of Waterford Castle for over a decade, Euro-toques chef, Michael Quinn is focused on sourcing fresh, seasonal ingredients.  “I am proud to source the finest produce of the region.  Our meat comes from O’Flynn’s butchers in Waterford, vegetables are organically grown by Tom Cleary of Wexford, our fish is sourced in Dunmore East and Kilmore Quay and our cheese is made by artisan producers.  This information is included on our menu cover page and our guests are always welcome to Just Ask for any further details”.
